Chocolate Waffles - A Spontaneous Experiment Involving The Waffle Iron


Today we felt like we needed a little food for nerves, and decided we´d add some chocolate to our waffle dough.


125 grams of chocolate, ground in the food processor (I took a mix of milk, orange almond and dark choc).

If you don't have chocolate with orange on hand, I highly recommend using a little orange zest. (Whenever I use organic oranges, lemons and limes  I freeze the zests. This way I have some at hand when needed) The mix of dark chocolate and oranges gives the waffles (or really anything sweet) an interesting taste.
115 grams of brown raw cane sugar I would use a little less if you use mainly milk chocolate)
1 table spoon Vanilla sugar or Vanilla essence (you can klick the links for a homemade option)
125 grams soft butter
mix all very well
add 3 eggs
mix more
1 teaspoon baking powder
2 table spoons of ACV (homemade) (I read somewhere that the reaction between the acid in the vinegar and the baking powder makes baked goods extra fluffy, but the difference is not really noticeable. What it does is give the waffles a slightly tangy taste a bit comparable to sourdough waffles. So depending on if you like it or not, you can either use the ACV here or exchange it for rum, that is what I usually use in my waffle dough)
275 grams flour
295 grams buttermilk
Mix well and bake your waffles in the waffle iron. I find if you open the waffle iron and the waffle sticks to the top, it needs a bit more baking. (see picture below) Btw because of the butter in the dough, I don't really grease my waffle iron, only a tiny bit for the very first waffle, all the others are usually fine.




I can imagine that these will also taste really good with Vanilla ice cream as a sandwich!
